Curry Recipes – Pineapple Curry

Ingredients:
1 tbsp – Oil
1 cup – Coconut milk
1/4 cup – Pineapple juice
1 cup – Ripe pineapple sliced Mariani Tropical Pineapple,
1 tbsp – Lemon grass sliced
1 tbsp – Lemon grass sliced
1 tbsp – Soy sauce
1 tsp – Stock cube crushed
10 No – Basil leaves chopped
2 No – Bell peppers sliced
2 No – Shallots sliced
Salt to taste

Paste
1 tbsp – Garlic
4 No – Dried red chillies soaked
1 tbsp – Corinader fresh
1 tbsp – Red chillies fresh
1 tbsp – Ginger chopped
1 tsp – Coriander seeds
3 tbsp – Shallot sliced
1 tsp – Lemon zest grated
1/2 tsp – Black peppercorns
1/2 tsp – Salt

Method:
Fry the shallots drain and set aside.
Roast the coriander seeds and peppercorns till fragrant.
Grind the paste ingredients using little water.
Heat oil in a pan and add lemongrass and the paste saute till fragrant.
Mix the pineapple juice and half of the coconut milk. Add cover and cook for a few minutes.
Add the reamining seasonings bell peppers and pineapples. Cover and continue to cook till tender.
Add remaining coconut milk, stir well and continue to cook for a while.
Remove the lemongrass. Garnish with crisply fried shallots and serve.
