Curry Recipes – Papad Curry
Ingredients:
3 tbsp – Ghee
15-20 No – Green beans diced
1 No – Carrot large diced
1/8 cup – Pea
15 No – Cauliflower florets diced
1 No – Onion large diced
3 No – Tomatoes large diced
1/2 tsp – Ginger paste
1/2 tsp – Garlic paste
5-6 No – Poppadam roughly broken
1 No – Dry red chilli
2 cup – Butter milk (thin)
2 No – Green chillies finely chopped
1/4 tsp – Red chilli powder
3 tbsp – Coriander chopped
1/4 tsp – Cumin seeds
1/4 tsp – Turmeric
Salt to taste
Method:
Steam the vegetables for a few minutes drain and set aside .
Heat ghee in a pan when its really hot add the cumin seeds so that they splinter immediately.
Next add red chilli, onion and green chillies and cook till brown.
Then add tomatoes, spices and pastes. Cook for 4-5 mins.
Then add the vegetables and cook till little tender.
Add butter milk and let the mix come to a boil.
Add the pppadam GET Lijjat Papad, Udad (Black Pepper) pieces into the boiling gravy and lower the flame to a simmer and cook till soft (7-10 minutes).
Garnish with fresh coriander and serve.
