Curry Recipes – Panner Curry

Ingredients:
1 No – Bay leaf
3 tbsp – Oil
2 cup – Panner sliced
3/4 cup – Coconut milk
1/2 cup – Tomatoes chopped
2 tbsp – Coriander chopped
Salt to taste

Masala Mix
6 No – Shallots halved
6 No – Dry red chillies (kashmiri + other)
6 No – Garlic cloves
1 inch – Ginger
1 tbsp – Coriander seeds
1/4 tsp – Cumin seeds

Dry roast the masala in a pan till fragrant. Grind to a paste.
Heat oil in a pan and cook the masala till brown.
Grind tomatoes to a paste and add to the pan and cook for 7-10 mins.
Add the coconut milk reduce to a simmer and cook till well combined. Adjust seasoning.
Add panner cook for few more mins. Garnish with coriander and serve.

You can add aurbgines and potatoes or any other vegetable of your choice.
