Curry Recipes – Mushroom Curry

Ingredients:
2 tbsp – Oil
1 tbsp – Red/Green curry paste
1 cup – Coconut milk
1 tbsp – Tomato paste
1 cup – Vegetable stock
1/2 tbsp – Lemon leaves chopped
1 cup – Mushroom chopped
1/2 cup – Zucchini chopped
1/4 cup – Bell pepper chopped
1/2 cup – Green beans
1/4 tsp – Pepper black or white
6 No – Kaffir lime leaves chopped
1/4 tsp – Brown Sugar
1 tbsp – Basil leaves sweet chopped
2 No – Red chillies dry broken
Salt to taste

Method:
Heat oil in a pan over medium heat and stir in the curry paste. Cook till fragrant.
Add the vegetables and cook for 1-2 mins.
Add the coconut milk, stock, kaffir lime leaves, seasoning and sugar and bring to a boil.
Garnish with chillies and basil and serve with rice.
