Curry Recipes – Mixed Vegetable Curry
Ingredients:
2 tbsp – Oil
1 cup – Mixed vegetable (green beans, carrots, peas, cauliflower)
1 No – Bay leaf
1 No – Cinnamon stick small
1 No – Onion chopped
2 tbsp – Tomato puree (optional)
30 gms – Khoya/mawa grated
1/4-1/2 cup – Water
Salt to taste
Paste
1/2 tsp – Fennel seeds (badi safun)
1 tsp – Garlic chopped
1 tbsp – Coriander seeds
1 tsp – Ginger chopped
1 tsp – Green chillies chopped
1/4 tsp – Cumin seeds
1/4 tsp – Pomegranate seeds
3 No – Cloves
Method:
Grind to make a paste.
Heat oil and add the bay leaf and cinnamon once a little fragrant add the onions and cook till brown.
Then add the paste and cook for few minutes.
Then add the mawa and cook for a while.
Add water and increase if mix is too thick.
