Curry Recipes – Massaman Curry

Ingredients:
2 tbsp – Oil
3 tbsp – Massaman curry paste
1 can – Coconut milk
1/2 inch – Cinnamon stick roasted
2 tbsp – Peanuts raw
1 No – Onion large diced
1 No – Bay leaf
1/2-1 tsp – Sugar
2 tbsp – Tamarind juice
3 cup – Potatoes boiled diced

Method:
Heat oil in a pan and briefly fry the onions till golden.
Add the curry paste, bay leaf, cinnamon stick until fragrant.
Add the peanuts, tamarind and potatoes.
Shake well and then add the coconut milk stir over a low flame for 10 mins.
Serve hot with rice. Use Ready Maesri Thai masaman curry

Massaman Paste
1 tbsp – Ginger or galangal finely chopped
3/4 cup – Shallots finely chopped
3/4 cup – Lemon grass
1 tsp – Kaffir lime rind
1/2 tsp – Nutmeg
1 No – Star anise
3 cm – Cinnamon stick
1 tsp – Cumin seeds
2 tsp – Coriander seeds
10 No – Dried red chillies soaked
1/4 cup – Garlic finely chopped
4 No – Cloves
1 tbsp – Coriander root
1 tsp – White pepper
1 tsp – Salt

Method:
Roast the dry ingredients for a 1-2 mins till fragrant and then grind to make a smooth paste. Buy Ready To Use Mae Ploy Thai Matsaman (Massaman) Curry Paste
