Curry Recipes – Lentil Vegetable Curry
Ingredients:
1 tbsp – Oil
4 No – Purple aubergines small diced
1/8 cup – Red pumpkin diced
1/8 cup – Sweet potato diced
1 No – Carrot medium diced
1 tbsp – Garlic finely sliced
1 tsp – Ginger finely sliced
1 tsp – Curry leaves chopped
1/4 cup – Coconut grated
1 1/2 cup – Red lentils (masur dal)
1 tbsp – Lemon juice
Salt to taste
Powder
1 tsp – Cumin seed
1 tsp – Coriander seed
1/2 tsp – Fennel seeds
2.5 cms – Cinnamon stick
1 tsp – Peppercorns
1/2 tsp – Pomogranate seeds (anardana)
2 No – Cardamom
Method:
Dry roast and blend the masala to a powder (leave out the fennel seeds if using dal).
Heat a pan add all the ingreidents excpet dal mix and cook for few mins (4-5 mins).
Cook the dal and puree it.
Add to the above mix. Simmer for a while and serve hot.
Option: Instead of dal add 2 cups coconut milk and cook all the ingredients together.
