Curry Recipes – Avial
Ingredients:
2 tbsp – Coconut oil
1/8 cup – Yam sliced
1 No – Cucumber medium sliced
2 No – Drumstick sliced
1 No – CarrotĀ medium sliced
1 No – Raw banana sliced
8-10 No – Snake gourd sliced
1 tbsp – Raw mango grated (keri) (optional)
8-10 No – Runner beans sliced
1 1/4 cup – Buttermilk
Spice Mix
2 No – Green chillies
2 No – Shallots chopped
1/4 cup – Coconut grated
1 tsp – Curry leaves
1/8 – 1/4 tsp – Turmeric
1/4 tsp – Cumin seeds
Salt to taste
Method:
Coarsely grind the spice mix.
Heat oil in a pan and add the spice mix to it cook for a 1-2 mins.
Boil the vegetables in another pan with salt.
Add the vegetables to the spice mix.
Then add butter milkĀ (increase if necessary) to it and stir well.
Heat on a low flame till the buttermilk mixture reaches medium-thick consistency, keep stirring continuously.
