Mushroom Corn Curry


Ingredients:
2 tbsp - Oil
1 tbsp - Red curry paste
1 cup - Coconut milk
1 tbsp - Tomato paste
1 cup - Vegetable stock
1/2 tbsp - Lemon leaves chopped
1 cup - Mushroom chopped
1 cup - Baby corn sliced
1/4 tsp - Pepper black or white
1/4 tsp - Brown Sugar
1 tbsp - Basil leaves sweet chopped
1 No - Red chillies dry broken
Salt to taste


Method:
Heat oil in a pan over medium heat and stir in the curry paste. Cook till fragrant.
Add the vegetables and cook for 1-2 mins.
Add half the coconut milk, stock, kaffir lime leaves, seasoning and sugar and bring to a boil.

Recipe - 8


Pineapple Curry


Ingredients:
1 tbsp - Oil
2 cup - Coconut milk
3/4 cup - Ripe pineapples peeled
2 tbsp - Lemon grass
1 inch - Cinnamon stick
1 tbsp - Tamarind pulp
1 tbsp - Shallots fried
1 No - Star anise
1/4 tsp - Turmeric
1 tsp - Black pepper
Salt to taste


Paste
3 tbsp - Roasted peanuts
1 tsp - Garlic
1 tsp - Ginger
1/4 tsp - Brown Sugar
1 tsp - Coriander powder
4 No - Shallots


Method:
Grind the paste ingredients using little water.
Heat oil in a pan and add cinnamon, star anise, lemongrass and the paste saute for about 5 mins.
Then add the pineapple and half of the coconut milk and mix well. Cover and cook for a few minutes.
Add salt, turmeric, pepper and mix well.
Cover and continue to cook till the pineapples are tender.
Add tamarind pulp and remaining coconut milk, stir well and continue to cook for a while.
Remove the lemongrass and Garnish with crisply fried shallots and serve. Buy Dry Roasted Peanuts
