Curry Recipes - 7


Goanese Curry


Ingredients:
4 tbsp - Oil
1/2 cup - Mixed vegetable
2 No - Onion large
2 No - Tomatoes
1 tbsp - Garlic chopped
1 tsp - Ginger chopped
1 No - Cinnamon small stick
1/4 tsp - Cumin powder
1/8 tsp - Green cardamom
2 No - Cloves
2 No - Peppers
3 No - Green chillies
1/2 cup - Coconut grated
1/2 cup - Coconut milk unsweetened
1 tsp - Coriander powder
Pinch of turmeric
Salt to taste


Method:
Heat some oil in a pan and fry all the dry spices for a min.
Add the coconut and briefly fry.
Place the onions direct on the flame till brown. Grind the fried ingredients and onions.

Boil the tomatoes remove the skin and grind.
Add the fried ground ingredients to a pan along with the pureed tomatoes and spices. Cook for 10 minutes.
Add the coconut milk and bring to a boil. If needed add some water to get the desired consistency (its best if the curry is kept thick).
Serve hot.

If you do not like coconut milk you may replace it with a mix of poppy seeds and curd or fresh cream or all use all three.

Nawabi Curry


Ingredients:
3 tbsp - Oil
2 tbsp - Fresh cream
1/4 cup - Mixed vegetables
1/4 cup - Tomato puree
Any vegetable


Spice Mix
2 No - Onion large
2 tbsp - Curry leaves
1 tbsp - Garlic chopped
1 tsp - Ginger chopped
1 No - Cinnamon small stick
1/4 tsp - Aniseed
1 tsp - Cumin seeds
1/8 tsp - Green cardamom
2 tbsp - Poppy seeds
2 tbsp - Cashew nuts
4 No - Dry red chillies
2 tbsp - Curd
2 No - Cloves
1 tbsp - Coriander seeds
Pinch of turmeric
Salt to taste

Method:
Grind the spice mix to a paste and fry till brown.
Add the vegetables and cook for a few minutes.
Then add tomatoes and cook till done (approx 10-15 mins). Serve with rice or bread.
