Curry Recipes - 5


Thai Yellow Curry


Ingredients:
1 tbsp - Oil
2 tbsp - Yellow curry paste
2 1/2 cup - Light coconut milk
1/4 cup - Green beans cut in slices
1/4 cup - Sweet corns
1/4 cup - Cauliflower pr Broccoli cut into small florets
1/4 cup - Peppers
1/4 cup - Bean curd sliced
1/4 tsp - Sugar
3-4 tbsp - Basil chopped
1 tsp - Salt


Method:
Heat oil in a pan and briefly fry the paste.
Add the vegetables with the coconut milk stir over a low flame until it simmers.
Add the basil leaves and let the mix cook on a low flame for a while.
Serve hot with rice.


Thai Yellow Paste
1/2 tbsp - Ginger or galangal
1/2 cup - Shallots
1 tbsp - Lemon grass
1 tsp - Kaffir lemon leaves
2 tsp - Coriander seeds
4 No - Dried small red chillies soaked
2 No - Cloves
1 tbsp - Curry powder
1 tbsp - Garlic
1 tsp - Cumin seeds
1 tsp - Salt
1/8 tsp - Turmeric


Method:
Soak the dried red chillies, in hot water for 20-30 mins.
Grind all the ingredients to a fine paste.

Panang Curry


Ingredients:
1 tbsp - Oil
2 tbsp - Panang curry paste
2 1/2 cup - Light coconut milk
1/4 cup - Snow peas
1/4 cup - Sweet corn kernels
1/2 cup - Mushrooms
1/4 cup - Peppers
3-4 tbsp - Basil chopped
1 tsp - Salt


Method:
Heat oil in a pan and briefly fry the paste.
Add the vegetables with the coconut milk stir over a low flame until it simmers.
Add the basil leaves and let the mix cook on a low flame for a while.
Serve hot with rice.


Paste Mix
1 tsp - Ginger or galangal
2 tbsp - Shallots
2 tbsp - Lemon grass
1 tsp - Kaffir lemon leaves
2 tsp - Coriander root
1/2 tsp - Cumin seeds
2 tsp - Coriander seeds
8-10 No - Dried large red chillies soaked
1 tbsp - Peanuts roasted
2 tbsp - Garlic
1 tsp - White pepper
1 tsp - Salt


Method:
Deseed and soak the dried red chillies, in hot water for 20-30 mins.
Roast the coriander and cumin seeds till fragrant.
Grind all the ingredients to a fine paste.
