Curry Recipes - 3


Massaman Curry


Ingredients:
2 tbsp - Oil
2 tbsp - Massaman curry paste
1 cup - Coconut milk
1/2 cup - Coconut cream
2 tbsp - Peanuts roasted crushed or cashew nuts roasted
1 No - Onion large sliced
1 No - Bay leaf
1 tsp - Brown sugar
2 tbsp - Tamarind concentrate
2 1/2 cup - Potatoes boiled diced


Method:
Heat oil in a pan and briefly fry the onions till golden.
Add the curry paste, bay leaf; sugar and tamarind continue to remove the rawness.
Add the potatoes with the coconut milk stir over a low flame until it simmers.
Add the peanuts and let the mix cook on a low flame for another 2-3 mins.
Serve hot with rice.


Massaman Paste
1 tsp - Ginger or galangal
1/4 cup - Shallots
1 tbsp - Lemon grass
1 tsp - Kaffir lime leaves
1 No - Star anise
3 cm - Cinnamon stick
1 tsp - Cumin seeds
2 tsp - Coriander seeds
8 -10 No - Dried large red chillies soaked
3 tbsp - Garlic
4 No - Cloves
1/4 tsp - Cardamom
1 tsp - White pepper
1 tsp - Salt


Method:
Roast the dry ingredients for a minute or two and then grind to make a smooth paste.

Vegetables in Coconut Curry


Ingredients:
1 tbsp - Oil
2 tbsp - Chilli tomato paste
1/2 cup - Vegetables of your choice
2-3 No - Shallots chopped
1 1/4 cup - Coconut milk
1/4 tsp - Sugar if needed
Salt to taste


Method:
Heat oil in a pan and fry the shallots till soft.
Add the curry paste and keep stirring to remove the rawness.
Add the vegetables with the coconut milk and cook over a low flame till the vegetables get tender.
Serve hot with rice.


Curry Paste
1/4 cup - Onion
1 tbsp - Lemon juice
1 tbsp - Lemon grass chopped
1/4 cup - Coriander chopped
2 tbsp - Basil leaves
3 No - Dried red chilli
1/2 tsp - Coriander seeds
1 tbsp - Tomato paste
2 No - Garlic cloves
1/2 tsp - Black pepper
1/2 tsp - Salt


Method:
Roast the dry ingredients for a minute or two and then grind to make a smooth paste. Buy Thai Kitchen Pure Coconut Milk
