Curry RecipesCurry Recipes - 2 Vegetable Kofta Curry
Ingredients: Oil for frying 1 No - Potato large boiled 1 cup - Mixed vegetables (beans, peas, carrots) finely chopped 3 tbsp - Gram flour (besan) 2 No - Green chilli finely chopped 1 tsp - Garlic paste 1 tsp - Ginger paste Salt to taste 1 1/2 cup - Tomato gravy Method: Mash the potato and roughly mash the vegetables and mix them. Add the seasonings. Alternatively you can finely chop the vegetables and briefly fry them in oil for a min. Mix them with potato and the seasonings and make small dumplings. Make a batter of gram flour and water of medium thick consistency. Dip each of the dumplings in it and fry on medium heat till brown. Drain and set aside. In another pan heat the red gravy and bring it to a boil. Turn to a low flame and add the dumplings. Mix well. Serve hot. Lauki Kofta Curry 1 No - Potato large boiled 2 cup - Bottle gourd 1 tsp - Green chilli paste 1 tsp - Ginger paste 1 tsp - Garlic paste 1/4 cup - Gram flour Salt to taste 1 1/2 cup - Tomato gravy Method: Peel and grate the bottle-gourd in a bowl. Then press it through a strain or your fingers to remove all water from the bottle-gourd. Now add the seasonings in it. Mix well and make small dumplings. Make a batter of gram flour and water of medium thick consistency. Dip each of the dumplings in it and fry on medium heat till brown. Drain and set aside.
