One of the cornerstones of culinary specialties has always been sauces.
Right from traditional flavours to their contemporary counterparts all remain dependant upon some key ingredients, such as stocks, wines and fruits for flavouring. And the real task remains in understanding ingredient blends to create a perfect recipe without altering flavours.
For instance, in Mexican and Indian cuisine a number of dissimilar ingredients are paired such as vegetables (tomatoes), chillies, nuts/seeds, with spices to create one perfect blend.
Similarly, the addition of quality condiments like chilli sauce, mustards, ketchup, vinegar helps in creating a variety of tones from smoky to savoury to sweet and tangy.
One great way is to replace the actual smoke for a smoky seasoning to giving a different tone to the base sauce. So the next time you make a pizza add some smoked paprika to the tomato sauce and you can even use it as a garnish for grills.
Cold smoky herb infusion can be another good addition to a BBQ sauce.
