Cold Appetizers – Tortilla Roll Ups
Tortilla means ‘little torta’ or ‘little cake’ in Spanish. This staple Spanish food was a flat omelette usually filled with potatoes, onions or salt cod, which is cut into quarters like a cake and served.
With Spainsh conquest of South America the food became native to the New world.
Tortillas were usually made from wheat or maize flour.
Since maize was a staple crop of Mexico they make maize flour tortilla, likewise, Honduras is well known for using wheat flour tortillas.
Traditionally, all Mexican dishes (except burritos) are made with maize and not wheat, tortillas.
Ingredients:
4 No – Tortilla
1 No – Cucumber sliced chopped
1 No – Bell pepper sliced
6-8 No – Red grapes sliced
6-8 No – Olives sliced
1/2 cup – Alfalfa sprouts
1/2 cup – Sour cream
1 No – Garlic clove minced
1 tbsp – Taco seasoning
Salt to taste
Method:
Mix sour cream, garlic and taco seasoning in a bowl.
Spoon the mixture on each of the tortillas.
Add salt to the vegetables and mix well. Then place the vegetable mix (2-3 tbsp or as you feel appropriate).
Then being roll up the torilla tightly. Wrap the rolls in a foil and chill.
Prior to serving remove from the foil and cut the rolls in small slices.
Serve chilled as it is or with a dipping sauce – salsa.
