Cold Appetizers – Savoury Pita Pockets
Pita a wheat based flat bread, is a staple of the Middle Eastern, Mediterranean and Balkan cuisine.
In addition to being flat, the bread is made in 2 layers which upon baking separate to form an internal pocket. This pocket occurs because of the extremely high temperatures at which the bread is baked.
These pockets are stuffed with various fillings of meat, cheese, vegetables, and salads. Though traditionally falafel and kebabs being the staple.
Much of pita’s popularity in the West since 1970s is attributed to the growth of pocket type of sandwiches instead of using pita to scoop foods. So these are sometimes even called ‘pita pockets’ or ‘pocket pita’.
Ingredients:
2 No – Pita
1 No – Tomato finely chopped
1 No – Red onion finely chopped
1/2 cup – Cabbage finely chopped
1 No – Peppers finely chopped
1/2 No – Carrot finely chopped (optional)
1/4 cup – Mint finely chopped
1/4 cup – Yogurt
2 No – Garlic clove minced
1/2 tsp – Pomegranate seed powder
1 tbsp – Lemon juice
1/4 tsp – Sea salt
1/4 tsp – Pepper
Method:
Mix all the seasoning ingredients in a bowl and refrigerate for about 20 mins.
Slice the pita into half or qaurters. Toast them till a little crisp.
Add the filling and serve.
