Cold Appetizers – Roast Tomato Lettuce Rolls

To spice up your recipe with a rich savoury flavour roasted tomatoes can be a great option.
But please remember:
Preheat the oven at at least up to 375°F or 200°C. A high temperature and a relatively short cooking time helps in an even roast, while a lower temperature creates uneven roasting and gets them mushy.
Of the several varieties roma tomatoes because of their meaty texture work best.
You can add them to pizzas, bruschettas, marinara sauce, sandwiches, stews etc.

Ingredients:
1/2 cup – Extra virgin olive oil
6-8 No – Goat Cheese roundels
3-4 No – Tomatoes quartered
1 No – Cucumber thin slices
2 N0 – Garlic minced
1/4 tsp – Mint minced
2-3 tbsp – Mustard
4-6 No – Lettuce leaves
Salt to taste
Pepper to taste

Method:
Cut the cheese into 1/2-inch-thick rounds or squares.
In a bowl pour 5-6 tbsp of olive oil. Add mint salt and pepper and mix well.
Take each cheese slice and dip it in the above mix till well coated.
Then place the mix in a flat mid sized plate. Place in an air tight container. Set in a cool place or refrigerate for at least 2 hours or over night.

Mix the remaining oil and garlic.
Arrange the tomatoes on a wire rack or place on a baking sheet.
Brush the tomatoes and cucumber with oil and season with salt and pepper.
Set aside the cucumber in another dish along side the cheese.
Roast until the tomatoes are lightly golden and most of their juice has evaporated. Set aside to cool.

Place the tomatoes and cucumbers on the lettuce leaves and roll. Place the roll on the cheese and secure with a toothpick.
Garnish with mustard sauce and serve.
