Cold Appetizers – Pesto Ailoli Wrap

Ingredients:
Bread slices or Wraps
8-10 No – Olives halved
1 No – Red onion sliced
1 cup – Watercress shredded
8-10 No – Fruit slices (pineapple, kiwi, orange, grapefruit, sweet lime)
1 tbsp – Lemon juice
1 tbsp – Olive oil
1/2 cup – Mayonnaise
4 tbsp – Red pesto
4 tbsp – Sour cream
Pepper to taste

Method:
Mix the last 4 ingredients in a bowl.
Combine the rest in another plate.
Spoon the mayonnaise mixture on the wrap (use torillas).
Then add the vegetables at one end and spinkle some fresh fresh pepper.
Then roll the wrap tightly. Chill and serve.

Watercress has a peppery flavour so if you don’t like it you can add a mild tone by repalcing with lettuce.
