Cold Appetizers – Pepper Pinwheels
A pinwheel appetizer is a first course or hors d’oevure made usually from a thin slice of bread or tortilla or meat.
Layers of different ingredients form a spiral pattern, typically consisting of different colours and textures. Usually being served bite-sized they require to be fastened or secured with toothpick for easy eating.
Ingredients:
1 tbsp – Olive oil
3 No – Peppers
1/3 cup – Basil chopped
3 No – Garlic cloves minced
8 No – Cheese slices
8 No – Olives chopped
3/4 stick – Celery chopped
Salt to taste
Pepper to taste
Method:
Place the peppers on a baking tray and roast them in a hot oven, till soft and lightly burnt.
Remove and set aside to cool.
Cut the peppers in half and discard the stem.
In a bowl mix garlic, salt, pepper, olives vinegar and celery.
Cut the cheese slice to that of the peppers and place it over it.
Add a spoonful of the bowl mix on the cheese.
Begin rolling the pepper slices and lock it with the help of a toothpick.
Chill thoroughly before serving. Slice like pinwheels and serve.
