Cold Appetizers – Olive Antipasto
Antipasto means ‘before the meal’ some light savoury appetizers, served prior to the traditional first course of a formal Italian meal.
Antipasto can consist of many things. Traditionally an assorted platter of different foods is offered like cured meats, marinated vegetables, olives, cheese, probably anchovies and toasted bread with dip. Usually an antipasto is topped with some olive oil.
Though antipasto varies in form and numerous adaptations and recipes exist. The main purpose is to extend a meal to not only enjoy the dinning experience, but is also an opportunity to socialise with friends and family.
Ingredients:
6 No – Mushrooms
6 No – Pickled peppers
6 No – Cottage cheese/ Mozzarella cubes
6 No – Cherry tomatoes
6 No – Olives pitted
Marinade
1/4 cup – Virgin olive oil
1/4 tsp – Garlic powder
1 tsp – Oregano minced
1 tbsp – Basil minced
1 tbsp – Lemon juice
1/4 tsp – Black pepper
1/4 tsp – Sea salt
Method:
In a small bowl, combine the marinade ingredients.
Pour marinade over the vegetables Toss gently but thoroughly.
Then assemble the vegetables on skewers as desired.
Place them in an airtight container or sealed bag and set the mix aside for several hours (6-8) or overnight.
