Cold Appetizers – Panner/Cottage Cheese Cocktail

Panner is one of the most versatile cooking ingredient of India cuisine. This milk based product has a mild flavour and forms an excellent component for kebabs, curries, vegetables and other meals. Cubes of paneer can be added to salads, marinades, soups etc as it absorbs the flavouring adds a zing to the recipe.
In fact panner can be used as a replacement for tofu in everything from soup to salad to curry. It is ideal for vegetarians with gluten or soy intolerance and also provides the much-needed proteins (alternative to conventional TVP’s and tofu) and Vitamin-B.

Ingredients:
2 cup – Panner or Cottage cheese diced
1/8 tsp – Dry mango powder
4 tbsp – Cheese grated
1 cup – Mayonnaise or Thousand Island dressing
3 tbsp – Ketchup
1 tbsp – Lemon juice
or 1 No – Onion small chopped
1 tsp – Garlic minced
Dash or two of Tabasco

Method:
Mix cottage cheese, mango powder and cheese together.
Mix the remaining ingredients in a bowl.
Add the cottage cheese to the above mix and let it marinate for a while (1/2-1hour in the refrigerator oor at room temp).
Remove and paltter and serve with toothpicks/small fork.

Tip:You can add this marinade to bread and make sadwiches (pinwheels) or
to wraps (torilla, rice wrappers) or
stuff in pita pockets or cut pita in triangles and serve alongside.
