Christmas Recipes – Sweet Potato Relish

Some facts about sweet potatoes
90% of the world’s sweet potato crop is grown in Asia.
In the U.S. sweet potatoes are often referred to as “yams.”
Native Americans were growing sweet potatoes when Christopher Columbus arrived on America’s shore.
This vegetable has been rated the best when it comes to nutrients. Power packed with health benefits the sweet potato provides over 7x the recommended daily allowance (RDA) of vitamin A, 65% of Vitamin C and 80% of iron and calcium. Other add ons include vitamin B6, potassium and manganese, copper, pantothenic acid, niacin and thiamine.
Sweet potatoes provide antioxidants, causing them to rank high as anti-inflammatory.
So each week try and replace sweet potato with the white ones and rice.

Ingredients:
4 tbsp – Oil
1 cup – Sweet potato peeled diced
1 No – Bay leaf
2 No – Shallot medium chopped
2 No – Garlic clove minced
2 No – Red bell pepper medium roasted pureed
1 tsp – Thyme dried
2 tbsp – Hot sauce
2 tsp – Worcestershire sauce
1 tbsp – Coriander chopped
Salt to taste

Method:
Baste the sweet potatoes with oil and roast/stir fry adn set aside.
Heat some oil in a pan add shallots and bay leaf saute till light brown.
Add th garlic and cook for 2 mins.
Then add the bell pepper and seasonings and let the mix simmer for a while (5-7 mins).
Add the potatoes and cook further. Serve hot.
