Christmas Recipes – Butternut Squash Gratin
Ingredients:
3 tbsp – Butter
1 No – Squash peeled diced
2-3 No – Garlic clove minced
1 No – Green onion finely chopped
2 tbsp – Walnuts grated/finely sliced
1/2 cup – Vegetable broth
1/2 cup – Bread crumbs
1/2 cup – Blue cheese
1/4 tsp – Nutmeg (optional)
1 tbsp – Sage minced
1/4 tsp – Pepper
Salt to taste
Method:
Steam or cook butternut squash, covered until tender in the broth.
Heat butter in a pan and cook the green onions and garlic till soft.
Turn off the heat and add the herbs and seasoning.
Mix the blue cheese and breads crumbs and sprinkle them evenly over the squash mixture.
Garnish with walnuts (add more if desired).
