Christmas Appetizer Recipes – Pea Mushroom Crostini & Pineapple Pizza
Ingredients:
1 No – Ciabatta loaf cut in thick slices
1/2 cup – Peas or broad beans shelled
1/2 cup – Mushroom sliced
2 tbsp – Hot sauce
1/2 cup – Feta cheese
1/4 tsp – Garlic
1 tbsp – Lemon juice
Salt to taste
Method:
Boil the peas or beans in water till soft. Drain and lightly mash.
Heat oil in a pan and add the garlic and lemon juice once the mix sizzles add peas and mushrooms. Stir for 1-2 mins.
Add salt, hot sauce and combine. Turn off the heat.
Apply the mix on bread slices and garnish with feta.
Bake and serve hot (drizzle with some more lemon juice if desired). A variety of mushrooms to choose from…
Pineapple Pizza
Ingredients:
1 No – Thin pizza base
1 No – Red onion small cut roundels
1 No – Green pepper small cut roundels
4 tbsp – Pineapple tidbits
4 tbsp – Olives sliced
1/4 cup – Mozzarella cheese
1/4 cup – Feta cheese
1/4 tsp – Italian seasoning
Chilli flakes to taste
Method:
Sprinkle pizza crust with mozzarella.
Add the vegetables and pineapple.
Sprinkle the herbs.
Add feta and olives.
Bake till cheese melts. Add more cheese if needed.
Garnish with chilli flakes.
