Best Appetizer Recipes – Creamed Pumpkin Apple

Christmas and Thanksgiving are the time when you are stuffed with all sorts of fats – cheesy dips, gratins, pies etc.
So why not make these holiday recipes using some healthy options – Pumpkin.

Great for health because, one cup of pumpkin puree has zero cholesterol (made up of 90% water)

Rich in alpha and beta carotenes, important antioxidants
Builds strong immunity and a good source of dietary fiber

Pumpkin flowers are edible.
They have been growing in America for over 5,000 years.
Pumpkins come in various colours not just orange but also green, yellow, red, white, blue.

Ingredients:
arts or Bread slices
2 tbsp – Oil or buttter
1/2 cup – Pumpkin grated
1/2 No – Apple small cored finely diced
1 No – Red onion finely chopped
1 tbsp – Lemon juice
1 tbsp – Parsley minced
1/2 cup – Cheese
1/2 tsp – Pepper
Salt to taste

Method:
Heat oil in a pan and briefly fry the onions till pink.
Then add the pumpkin and seasonings and cook for a few mins.
Remove from heat and then add the apples.
Spoon the mixture in tarts or on bread slices.
Garnish with cheese and bake.

If using bread then apply butter and toast or grill the base side or else use pre-baked tarts. Then add the filling.

If using canned pumpkin, scooped into a plastic food storage container, will keep up to three months in the freezer.
