Simply Vegetarian Recipes — Straight from the kitchen..


Tomato rice is a relatively spicy Southern delight the recipe is real simple to make and can be served with rasam or sambar or raita.

1 cup – Rice
2 tbsp – Oil
1 btsp – Cashews chopped (optional)
4 No – Tomatoes chopped
1/4 tsp – Ginger grated
2-3 No – Green chillies finely chopped
1-2 tsp – Curry leaves chopped (optional)
1 No – Onion large chopped or
3 No – Shallots chopped
1/4-1/2 tsp – Chilli powder
1 tbsp – Fennel seeds (saufn)
Salt as needed

Heat oil in a pan and add the cashews adn fry till colour changes.
Then add the onions and cook till pink.
Roughly grind the fennel seeds in a mixer.
Add remaining ingredients and cook for a while.
Add the rice to the mix slow cook for 2-3 mins and serve hot.



A cool refreshing summer time salad stupidly east to make. Just a few basics like cucumber, tomatoes and mint and your ready to eat!

1 tsp – Olive oil
1 No – Tomato chopped
1 No – Cucumber chopped
2 No – Onion chopped
2 No – Garlic minced or finely chopped
1-2 tsp – Lemon juice
4 tbsp – Mint leaves finely chopped
4 tbsp – Coriander finely chopped
Salt to taste
Pepper to taste

Combine all the ingriedents in a bowl. Cover with plastic wrap and place in the fridge for 1/2-1 hour.
Toss the salad gently and then serve.



6-8 No – Tortillas/Chappati/Hot dog breads
1 cup – Salsa
8-10 No – Chappati
3-4 tbsp – Oil
1/2 cup – Panner
1-2 No – Potatoes chopped
1 No – Red onion chopped
1 No – Pepper chopped
1/2 – Ginger paste
1/2 tsp – Garlic paste
2-3 No – Green chillies chopped
1/4 tsp – Cumin seeds
1 tsp – Curry leaves chopped
1/4 tsp – Mustard seeds
1/8-1/4 tsp – Turmeric
Salt to taste

Heat oil in a pan and when really hot add the cumin, mustard seeds along with curry leaves.
Add onions and cook till colour changes.
Add the seasonings and peppers and cook till soft.
Parboil the potatoes and roughly mash the panner and add them to the pan. Combine well and set aside.

Place the chappati on a plate and spoon a mixture of salsa on it.
Add the mix roll and serve.



This is a stupidly easy snack treat for both kids and adults ready within 5-7 mins. Ideal for parties or as a quick bite at home.

1/2 cup – Beans cooked
1 cup – Dressing
1/4 tsp – Herbs (optional)
1 No – Pepper chopped
1 No – Onion chopped
Salt to taste

Lightly mash the beans and mix them with the dry ingredients.
Add the thousand island dressing and serve with chips.
